There was once a time when this was the only store in town. All items were on a shelf and you had to ask the person behind the counter for each item. This made judging that person and what they like to buy, much easier. And in turn make it much more efficient to gossip about that person.
Speaking of gossip, the general store was a place for people to just hang out and talk about other people. It was a place people could just relax.
Sanitation in those days were not nearly as strict as they are today. Judging by that nasty fly paper just sort of dangling over the meat area, well its gross, but better than flies on the meat. I do wonder how often it fell on a customers head... wouldn't that be funny? I can't wait to tell everyone about it.
