The FDA was created for stores like this one. While the meat sits on the counter for this picture, I'm certain it sat in a cold box in the back some place. But its still sitting on grout, and that couldn't be healthy. The orders were placed on the dirty floor. I don't even see a sink in there.
The twin blade fans are covered in dust and if you look carefully, if you follow them up, they are actually tied to the pipe above. I can only imagine these things turning on, just swinging about.
The place, I'm certain, was dim. This building is the Central Market, built in 1870, before lights were really made. If you look carefully, you'll see candle cups in the sign. In another picture I saw candle holders in the ceiling. This building was over 2 blocks long, it was more or less a mall, all lit with candles. Lights must have come out a bit later and lit the place pretty well. But there are a lot of lights in this, I can only assume each must be 40w or so.
I wanted to create that dim look. It hides the "issues" the place has, such as dirt and overhead cobwebs. While giving it a nice warm glow.
I chose bright yellow for the cast iron, hard to know what color they really used, but it wasn't white. It could have been a few bright colors, but I think fun house yellow would be the color they chose.
The hardest thing about this piece was fixing the spots, and trying to blend in that blemish in the center.
